Coffee-braised brisket, sliced in the pot

What do you with excess amounts of coffee sitting in your fridge? OK, maybe that never happens to you, but I sometimes wind up wanting less than my usual 3 cups of coffee in the morning, and I dump the remainder into a jar in the fridge. Usually it gets emptied via repeated, questionable decisions regarding cold coffee in the afternoon.

But sometimes… coffee needs another place to go. We can’t just let all that caffeine go to waste, can we?

Nut cream. OK, settle down, 12 year olds. Get your giggles out. Moving right along.

If you’ve gotten a bit bored of coconut oil, butter, heavy cream, or whatever else you’ve been putting in your morning coffee lately, you’ll find this creamy concoction made from raw macadamia nuts to be a welcome diversion.

Even better, you’ll get a wide range of flavoring possibilities by taking the 5 minutes in your morning to blend up your own cream.

I recommend blending in some cinnamon, nutmeg, and a few drops of Vanilla Creme flavor liquid stevia.

Raw macadamia nuts can be used to make an easy swap-in alternative for heavy cream, coconut oil, butter, or whatever other creamy coffee addition you may have gotten a bit bored with lately. Macadamia nuts are high in monounsaturated fat (that's good), very low in carbs (about 2g usable carbs per 1 ounce of nuts), and have a mild, creamy taste that readily accepts your favorite flavorings.

Ingredients

  • .3 cup macadamia nuts (whole, raw)
  • 4 tablespoons cold water

Note

Health note: macadamia nuts are low in poly-unsaturated fatty acids (that's good), but their high ratio of omega-6 to omega-3 fatty acids puts them in a category of fats that increases your need for omega-3 oils to compensate. Make sure you are taking plenty of fish oil, and consider increasing your consumption of fish oil if you end up using nut-based coffee creamer frequently.

Directions

Step 1
Place macadamia nuts and water into a high-speed blender such as the Vitamix (best results but you will need to double the recipe) or the Magic Bullet (shown here).
Step 2
Add optional flavorings, e.g. sugar-free syrup, liquid stevia drops, cinnamon.
Step 3
Blend until the "rocky" noise eventually smooths out.
Step 4

Serve warm from the blender directly into fresh coffee or espresso, or save in the fridge in a sealed container for later.
